Nacho Stuffed Bell Peppers

Nacho Stuffed Bell Peppers
Yield: 3 nacho-filled peppers
Pair with Occidental Kölsch, or your favorite light beer

Parchment-lined baking sheet
1 lb ground beef
1 tsp. chili powder
1 tsp. cumin
½ tsp. black pepper
¼ tsp. sea salt
¾ cup salsa — as spicy as you can handle!
3 bell peppers
1 cup grated Super Slayer cheddar (or more — we’d hate to limit you)
Hand crushed tortilla chips for some crunch!
Diced avocado
Sour cream (or non-fat Greek yogurt)
Sliced jalapeńos

Preheat oven to 375 degrees.
Remove seeds and membrane of each bell pepper, place on baking sheet. Brown ground beef over medium-high heat, drain off any fat and combine with cumin, chili powder, salt, pepper, and salsa

Evenly distribute mixture into the bell peppers. Top with Super Slayer to your heart’s content.

Bake for 10 minutes or until cheese is melted and peppers are hot. Remove from oven and top with toppings of your choosing. We recommend layering hand crushed tortilla chips, avocado, sliced jalapeño, sour cream and topping with a sprig or two of cilantro
