Smokey Cheddar Shrimp Stacks
Need a too hot to turn on the oven idea? Try stacking our Smokey Cheddar onto this delicious shrimp bite.
INGREDIENTS
- Face Rock Smokey Cheddar
- 1 dozen large shrimp
- 1 TB pickling spice
- 1 ripe avocado
- Effie’s Corncakes
- Furikake seasoning *
- Sriracha Sauce*
INSTRUCTIONS
Prepare the shrimp:
Bring a broad pan of water to boil. While water comes to a boil, prepare an ice water bath by placing two cups of ice into a large bowl and filling about halfway with water. When water is at a rapid boil, remove pan from heat, add pickling spice and shrimp, and cover. Let sit for five minutes or until shrimp are pink and firm. Remove shrimp from water and place into the ice bath to stop the cooking process. Peel, remove tail, and slice in half along the midline.
Slice Smokey Cheddar and Avocado.
Place Effie’s Corncakes on a serving dish, and build a stack with a slice of Smokey Cheddar, a slice or two of avocado, and two halves of a shrimp. Sprinkle with Furikake seasoning, and drizzle with Sriracha to taste or use topping of your choice.*
*Other topping ideas: flakey sea salt and balsamic glaze, oregano and lemon, pesto, cocktail sauce and chopped rosemary. Let us know how you build your Smokey Shrimp Stack!
