Capture the essence of summer with a bite of vanilla cupcake filled with sweet peaches. We’ve topped these treats with a tangy frosting made with our fresh Face Rock Apricot Honey Fromage Blanc.

  •         2 large ripe peaches, peeled, pitted and diced into ½” pieces
  •         1 tsp cinnamon
  •         1 Tbsp brown sugar
  •         Vanilla Cake mix
  •         8 oz (1 tub) Apricot Honey Fromage Fromage Blanc
  •         ½ cup (1 stick) butter, softened
  •         1-2 cups powdered sugar (depending upon taste)
  •         2 teaspoon vanilla extract

Place diced peaches into a bowl, sprinkle with cinnamon and brown sugar, mix lightly and set aside.

Mix vanilla cake mix according to directions. Place cupcake liners into a cupcake pan and fill 2/3 full with batter. Add 1 tablespoon of the diced peaches to each cupcake. Bake as directed, and let cool.

In a medium bowl, add 8 oz Apricot Honey Fromage Blanc, butter, vanilla, and 1 cup powdered sugar. Mix with a hand or stand mixer until creamy and fluffy. Add additional powdered sugar to desired sweetness.
