A monster mash up of two of our favorite flavors - garlicky Vampire Slayer and caramelized roasted sweet potatoes. This is a super easy dish to make. Stop after the mashing step, or go even further down the flavor road by topping the mash with more Vampire Slayer and giving it a second visit to the oven.
4 cups Sweet Potatoes, Peeled and Roughly cubed (3 medium sweet potatoes)
6 oz Vampire Slayer Cheddar, Shredded
¼ Cup butter, softened
½ cup milk
olive oil
salt and pepper
Heat oven to 400F
Peel and cube sweet potatoes
Place on a rimmed baking sheet and drizzle with olive oil. Sprinkle with Salt and Pepper.
Bake for 20-30 minutes until sweet potatoes are tender and lightly caramelized
Shred Vampire Slayer
Remove Sweet Potatoes from the oven and place into a large bowl. Immediately add milk and butter. Mash until creamy.
Mix in one cup of shredded Vampire Slayer.
Spread the mash in an 8x8 baking dish, and sprinkle with remaining Vampire Slayer Cheddar.
Return to the oven for 10 minutes or until the cheddar is melted and bubbly.
Serve immediately.
