Four thin-sliced Chicken Breasts (or take regular breasts and pound then flat
2 TB Mayonnaise
2 TB Dijon Mustard
Four slices deli Ham
Four 1/4” thick slices Vampire Slayer cheddar
One Egg, beaten
½ t smoked paprika
½ t salt
½ C Panko Crumbs
1 TB Olive oil
Preheat oven to 350*. Mix the mayonnaise and mustard together in a small bowl. Brush the mixture onto each of the chicken breasts.
Add a slice of ham and a slice of vampire slayer to each piece of chicken. Roll or fold chicken over, and secure with toothpicks.
Beat the egg in a shallow dish. Mix the panko crumbs, paprika and and salt in a separate shallow dish. Dip chicken into beaten egg, then press into the panko crumb coating.
Heat olive oil in an oven safe frying pan on medium high heat and lightly brown each side of the chicken breasts.
Place pan into the oven for 10-12 minutes to finish cooking.
