Peppercorn Harvest Reserve Clothbound cheddar is a rich and exquisitely flaky cheese that delivers a nutty, complex flavor that is accented by bursts of savory red and green peppercorns.

Peppercorn Harvest Reserve Clothbound cheddar is a rich and exquisitely flaky cheese that delivers a nutty, complex flavor that is accented by bursts of savory red and green peppercorns.

Making clothbound cheddar is a time-intensive process that requires equal parts quality ingredients, patience & alchemy. Fresh peppercorn harvest cheddar is molded, wrapped in cloth bandages & dipped in butter made from the same milk that goes into the cheese vats. After a minimum of 13 months in a carefully controlled cave environment, cheese wheels are released in limited allocations.

At the 2019 American Cheese Society Awards (what we like to call the “Oscars for Cheese), our Peppercorn Harvest Reserve Clothbound cheddar earned high honors with a first place blue ribbon in the Cheddar with Flavor Added category. This double winner also earned a 2nd place ribbon in 2017 for the same category.

  • Use this stunner as a star on your cheese board, or add it as the perfect finishing touch to finish off a gorgeous salad.
  • Drizzle a light stream of local honey over your Peppercorn Harvest. The combination of savory and sweet is the total package!
  • During aging, cheddars lose moisture in return for a flaky texture sparked with cheese crystals. Because it is a drier cheese, this isn’t going to be the best option if you are looking for a melter. Use slivers as a finishing touch instead!
  • Simple pairings help this cheese shine. Think crisp apples, roasted nuts, toasted pumpkin seeds, and dried apricots.

For wine pairings, we like to stay with smooth and mellow.  Dry Chenin Blancs, Gewürztraminers, & Rieslings, Chardonnay, Merlot, Malbec, and Pinot Noir.

For beer, we lean towards Kolsch, Hard Cider, Pumpkin Brews, Red & Brown Ales, Lagers, Porters & Stouts.

And don’t forget hard ciders! Cider and Peppercorn Harvest Reserve is quite heavenly.
