A crispy, caramelized cheese crust is your first clue that this grilled cheese is more than ordinary! Face 2 Face, our melty mixed-milk Cheddar made with Cow and Sheep Milk, is paired with sweet fig jam, crisp pancetta slices and pickled red onion for an over the top Grilled Cheese that will satisfy the sweet, salty, and savory cravings in your life!
Adding finely grated Face Rock 3-6 year premium aged cheddar, our clothbound cheddar, or Parmesan to the outside butter layer creates an amazing layer of flavor. We liked this sandwich using a hearty whole grain bread. It added a nutty sweetness to the flavor package.
½ cup finely grated Premium Aged Cheddar or Parmesan
6 oz Face 2 Face Mixed Milk Cheddar, grated
Fig Spread
4 slices pancetta
Picked red onion slices (or sub regular red onion slices)
4 slices whole grain bread
6 tbsp butter
Heat a skillet over medium heat, and crisp slices of pancetta until crispy, turning as needed. Set aside on paper towels to drain. Remove grease from pan and lightly wipe with a paper towel. Set aside and use to cook your sandwich.
Place four slices of bread on a prep board and spread each slice with one tablespoon of butter on each. Press the grated Premium Aged Cheddar into each buttered side of bread. Flip over, and spread each slice with the fig jam. Sprinkle the Face 2 Face shreds equally on each piece of bread. Top two slices of the bread with two pieces of pancetta and add pickled red onion (here’s a quick recipe!). Close the sandwiches with the Premium Aged Cheddar facing out.
Place the skillet back onto the burner and heat 2 tablespoons of butter over low-medium. Carefully place the sandwiches in the skillet and cook until the external cheddar is golden brown and the interior cheddar is melted. Watch your heat and adjust as needed to avoid burning. Use a fine edged spatula to make sure you get underneath the crust, flip & repeat.
