Using store bought cake mix is such a great base for bringing fun seasonally fresh treats to the table. Scratch made frosting using our creamy fresh fromage blanc takes these fresh peach cupcakes to the next level! Fromage Blanc resides in the same fresh cheese tier as ricotta and cream cheese, so it's a fantastic sub when you want to experiment or add a little more tang to a dish. Here we use fresh peaches but any stone fruit would work great.
2 large ripe peaches, peeled, pitted and diced into ½” pieces
1 tsp cinnamon
1 TB brown sugar
Vanilla Cake mix
8 oz (1 tub) Apricot Honey Fromage Blanc
½ cup (1 stick) butter, softened
1-2 cups powdered sugar (depending upon taste)
2 teaspoon vanilla extract
Place diced peaches into a bowl, sprinkle with cinnamon and brown sugar, mix lightly and set aside.
Mix vanilla cake mix according to directions. Place cupcake liners into a cupcake pan and fill 2/3 full with batter. Add 1 tablespoon of the diced peaches to each cupcake. Bake as directed, and let cool.
In a medium bowl, add 8 oz Apricot Honey Fromage Blanc, butter, vanilla, and 1 cup powdered sugar. Mix with a hand or stand mixer until creamy and fluffy. Add additional powdered sugar to desired sweetness.
