Did you know that cauliflower fritters are a favorite street food in Southern Italy? The traditional version, Frittelle di Cavolfiore, are battered and deep fried. Yum!!
We played with a version that folds in Pepper
Alpine, our black pepper crusted cheddar, and cooks up quickly as a veggie
pancake. With a mild taste and plenty of melty cheese, these fritters are great
for a snack or an appetizer. Kids love these little cheesy bites too – great
way to eat more veggies!
You can also go our route, and use these flavorful fritters as a “toast” base for a runny 7-minute egg and avocado treat.
10 ounces cauliflower, riced or grated
1/2 teaspoon salt
4 ounces shredded Pepper Alpine Cheddar (about a cup)
¼ cup flour (all purpose, or alternative for keto/low-carb)
2 large eggs
2 tablespoons butter
2 tablespoons olive oil
Sliced Green onion
Soft boiled eggs
Avocado
Sour cream
If using a frozen bag of riced cauliflower, let thaw at room temperature. If using fresh cauliflower, grate the florets using a box grater or a food processor. Place the cauliflower in a bowl and add salt. Stir until combined and let sit for five minutes.
Squeeze moisture from the grated cauliflower, discarding as much liquid as possible. You can wrap the cauliflower in a few layers of paper towel, a nut milk bag or fine cheesecloth prior to squeezing for less mess.
Return squeezed cauliflower to the bowl, add the cheese, flour, and eggs and mix well until combined.
Heat a pan over medium heat until hot. Add butter and olive oil.
Drop a 1/3 cup scoop of the cauliflower mixture into the hot pan and flatten with a spatula to about a half inch thick. Three or four fritters can be cooked at a time depending on the pan size. For smaller fritters use a few tablespoons of batter.
Cook fritters until the bottom is crispy and golden brown, about 5 minutes. Flip carefully to the other side and cook until golden. Transfer to a paper towel lined plate to drain. Repeat until the mixture is used up.
Serve warm and top with green onion, avocado and egg as desired. For a pretty appetizer, top with a spoonful of sour cream and sliced green onion.
