1 red onion
2 cups Vampire Slayer Cheddar, shredded
Preheat oven to 400°. Line a baking sheet with parchment paper.
Peel the red onion, slice into half inch rings, and separate rings.
Make eight nests of two to three onion rings of different sizes on the cookie sheet.
Distribute cheese into the eight rings, pressing the cheese into each circle of onion.
Bake for 8-10 minutes, watching for when the cheese begins to turn brown.
Let cool before removing from baking sheet.
