Curds are un-aged so they have a clean, milky flavor and none of the bite found in aged cheddars. Because they come right out of the vat, they have a slightly rubbery, squeaky texture against your teeth, that's how you know they are fresh! Enjoy!

How It's Made
After enzymes have been added to fresh milk and allowed to set up the whey is drained off leaving beautiful fresh curds behind. These curds are then pressed together to create cheese. At Face Rock, we make sure to pull some of these curds aside for our customers so they can enjoy one of the most delightful treasures we've ever tasted-- Fresh Cheese Curds!
Curds are best when served at room temperature or slightly warmed. Keep them up to two weeks in your refrigerator, but remember to microwave them for 5 - 10 seconds before serving to restore their squeaky texture. Most people eat curds straight from the packaging like potato chips but you can enjoy them in many ways. Try them battered and fried, along with French fries and gravy as Poutine, or chopped up and mixed into soups or salads!
