Clothbound Cheddar is a rare tradition for American cheesemakers. It’s a process that requires equal parts quality ingredients, patience & alchemy. Fresh cheese is molded, wrapped in cloth bandages & dipped in butter made from the same milk that goes into the cheese vats. After a minimum of 13 months in a carefully controlled cave environment.
Face Rock’s Clothbound Peppercorn Cheddar presents with a rich & exquisitely flakey texture that delivers a nutty, complex flavor accented by bursts of savory flavor from red and green peppercorns.
Available Online in approximatley 1 lb or 1/2 lb wedges.

How It's Made
Our Peppercorn Harvest is pressed into round molds, wrapped in cloth bandages and dipped in butter made from the same milk that goes into the cheese vats. It is then carefully stored for a minimum of 13 months in a carefully controlled cave environment.
Bandage wrapping allows clothbound cheddars to breathe more during the aging process which compounds the flavors and creates a rich and flakey texture compared to cheddars that age the traditional way. Each bite is accentuated by red and green peppercorns that burst with savory-sweet flavor. More earthy than spicy, this cheese has a "cheddary" bite, savory harvest flavor, and leaves the palate with a hint of sweetness.
This cheddar practically begs to be put on a cheese plate and eaten with a robust red wine. Savory pepper notes lend it to strong flavors like cured meats, marinated veggies, and roasted garlic, which the sweet aftertaste compliments granny-smith apples and honey.
