Face Rock Frico

Frico are cheese crisps made in a nonstick sauté pan. Face Rock cheddar shreds melt perfectly into a lacy crisp that becomes a perfect base for an appetizer, a garnish, or a shell to fill with all the goodies.

You can use any of our cheddars to make Frico. We made this batch with Peppercorn Harvest Cheddar that adds a beautiful crunch of peppercorn throughout.

Ingredients

Face Rock Peppercorn Harvest Cheddar, Shredded

Directions

Shred cheddar
Heat a nonstick saute pan over medium heat
Add 1/4 cup of shreds to the pan and spread them out into a 4" loose circle.
Let cook until the cheese is melty and bubbly.
When you can move the disc around without it losing shape, flip with an offset spatula or tongs. If your disc folds when you flip it, you can gently straighten it out.
Let cook for about 15 seconds more.
If you'd like a shell shape, immediately drape your Frico over a rolling pin or dowel. If you'd like a flat Frico, lay the disc onto a flat surface. Let cool to set the shape.
Repeat with remaining cheese. Watch your pan temperature. If it gets too hot you can reduce heat or remove your pan from the heat to cool slightly in between Frico.
