Baked Mac & Cheese is a very easy way to get a very delicious dish on the table. We use two different cheddar flavors in this dish, and you can mix and match any to your preferred taste! If you're new to baked mac, you'll find this is going to be less "saucy" then mac and cheese that starts with a béchamel sauce.
1 TB butter
¾ cup sour cream
1.75 cup whole milk
1 ts dried mustard
¼ ts cayenne
½ t sea salt
¼ tsp black pepper
6 oz Smokey cheddar, grated
6 oz Peppercorn Harvest Cheddar, grated
6 oz shells or elbow pasta
Heat oven to 375. Grease a medium size baking dish with the butter and set aside.
In a roomy bowl, combine sour cream, milk, mustard, cayenne, salt and pepper and stir until blended.
Set aside a ¼ cup of the cheddar for later and stir in the cheddar and uncooked pasta.
Pour into the buttered dish, cover with foil, and bake for 30 minutes.
Remove from oven, stir, sprinkle with the remaining cheddar and replace uncovered in the oven. Bake until golden and bubbly - about 30 minutes.
Let rest for 10 minutes and serve.
If you have leftovers to reheat, add a tablespoon of milk per cup of noodles!
