Our applewood smoked Smokey Cheddar is a dreamy melter, and adds a depth of flavor that hits just the right spot.
We like to use cast iron for making these delightful Smokey Apple Bacon Quesadillas because we can get nice brown crispy bits on our tortilla without using a lot of oil. But use whatever frying pan or griddle you have handy!
8 Corn Tortillas
6 oz shredded Face Rock Creamery Smokey Cheddar
8 slices bacon, cooked until crisp
1 Apple, cored and sliced thin
High heat cooking oil or cooking spray
Lay out four tortillas on a work surface. Sprinkle each tortilla with ¼ cup shredded Smokey Cheddar.
Place 2-3 apple slices, and two strips of bacon, broken in half, on each tortilla. Sprinkle each with another ¼ cup shredded Smokey Cheddar.
Top with remaining tortillas. Heat a cast iron frying pan on medium high heat and brush or spray the bottom with a high-heat cooking oil of your choice – we used avocado oil.
Place the four quesadillas in the pan and cook until the bottom tortilla is golden brown. Gently flip, and cook until the cheese is melted.
