Three ingredients are all that's needed for these delicious and pretty rollups.
6 oz Monterey Jack, Shredded
4 oz diced pancetta or bacon
1 package puff pastry, thawed
Preheat oven to 375F
Brown pancetta in a saute pan over medium heat until crispy. Drain on paper towels.
Unwrap a sheet of puff pastry onto a rolling mat or cutting board and gently press flat.
Sprinkle with shredded Face Rock Monterey Jack and crispy pancetta.
Roll up starting at a long edge and cut into 1/2 inch to 3/4 inch slices. Slice straight down into the roll, try not to saw! This will help the pastry puff.
Place on a baking sheet and bake at 375F until golden. About 18 minutes.
