Ingredients

1 Onion
1 Potato
About 8 Eggs
1 block Face Rock Creamery Onion and Chive Cheddar Cheese
1 cup Milk
Salt
Pepper
Garlic Seasoning

Directions

Directions:

Preheat oven to 350°F.
Dice 1 potato and half of an onion.
Cook the diced potato and onion in a skillet over medium heat until tender and lightly browned.
In a mixing bowl, whisk together eggs (about 8, depending on your batch size) with your choice of seasoning. (I used Salt, Pepper, and Garlic Powder)
Add 1 cup of milk to the egg mixture and whisk until fully combined.
Stir the cooked potato and onion mixture into the egg mixture.
Prepare a muffin tin by greasing each cup or using liners.
Evenly pour the egg and veggie mixture into each cup.
Sprinkle shredded Onion and Chive cheddar cheese on top of each one.
Bake for 15–20 minutes, or until the eggs are fully set and the tops are lightly golden.
Let cool slightly before removing from the tin. Serve warm and enjoy!
